Une ferme autonome qui a choisi de tout maîtriser du champ de blé jusqu'à la vente directe au consommateur : Olivier Clisson est paysan-boulanger. Son quotidien s'organise entre la culture des céréales, la moisson, la meunerie pour produire sa farine, la fabrication du pain cuit dans un four à bois traditionnel et le contact avec les consommateurs. Sa ferme est baptisée Le Chant du Blé, située en Ille-et-Vilaine, à proximité de Rennes.
